About this deal

First, you should compare the dimensions of the oven you're interested in with the size of your barbecue – you won't get far if your grill isn't big enough for the oven to sit snugly. Pizza ovens are often billed as portable, so we weigh them and carry them a short distance, taking bulkiness and comfort into account.

Set a pizza stone or heavy baking tray on the grill, close the lid and open the vents as wide as possible. Dust the work surface with semolina, turn the dough out and divide into four equal balls. Roll each out thinly to make a large round base, then spread with the cooled tomato sauce. Tear the mozarella into small pieces and dot over the sauce, then add the remaining toppings evenly. We use the same methods, dough, sauce and toppings to prepare and cook each pizza to keep our tests as fair as possible. There aren't many electric pizza ovens around that are for use at home, but the Ooni Volt 12 and Sage Pizzaiolo are examples that might be a good fit for those who are keen to cook artisan-style pizza without the need for outdoor space. Sustainably sourced wood logs are available. Where possible, we'd suggest buying these for a reduced environmental impact. Charcoal pizza ovens In each pizza oven, we cook three of the most popular types of pizza – margherita, pepperoni and veggie – to see what results we get when cooking with a variety of textures and flavours. Cheese: For best flavor, let’s use TWO cheeses.Shredded mozzarella for that classic pizza flavor and smoked gouda for deep smoky flavor. Smoked gouda pairs wonderfully with the sweet BBQ sauce and fresh cilantro! If you don’t want to make the extra trip to the store, skip the gouda and just use mozzarella. Cheese - There are so many options when it comes to cheese on a pizza. We went with a simple mature cheddar and shredded mozzarella to add creaminess and flavour. You could swap them for some goats cheese and parmesan. We like to use mature cheddar or another strong tasting cheese, as the stronger the flavour, the less you need to use on the pizza.

We use an infrared thermometer to record the surface temperature of the pizza stone in the oven and time how long it takes to reach 400°C. Some pizza ovens take less than 15 minutes, while others fail to reach 400°C altogether. Pizza quality Pizza stone These are the cooking surface and are usually made from moisture-absorbent cordierite. They're fantastic for retaining heat and are key for crisping up the base of your pizza. Most ovens come with a pizza stone included. Cheese - We used a mixture of cheddar and mozzarella. Use an extra mature cheddar, as the stronger flavour means you can use less of it, making it a lower in calories pizza.Pizza cutter A good pizza cutter is key for slicing up and serving your pizza. The larger the circular blade, the better. This prevents the pizza cutter from moving your toppings around and makes it easier to cut through extra-puffy pizza crusts. They're often able to cook up a range of different pizza types and require very little tending unlike those that cook with an open flame.

Fiery tomatoes, cheese, pepperoni, hot green and red jalapenos and a spicy chilli sauce Stonebaked cheese and tomato pizza (V) Those who want to use charcoal should go for a wood-fired oven and introduce a few briquettes to a mostly wood-based fire. BBQ pizza ovens The oven is super easy to light. All you need is a natural firelighter and either kiln dried hardwood OR pizza oven pellets. Our user guide shows you how to get your oven safely and efficiently once lit. Size - L76cm x W35cm x H77cmThe traditional and most popular type. They require the most patience and skill, as they usually take longer to get up to temperature than gas, and need almost constant attention to get the flames to the right size and consistency. Storage: consider the space you have available. The smallest pizza ovens we've tested are the BBQ-top models, which thanks to their small, boxy size, can easily be stored in a garage, shed or even inside somewhere. A number of the models on this list have easy foldaway legs, meaning they too will take up very little room when not in use. Some of the larger models we've tested will need to be kept outside in all weathers, in this case, a cover is an absolute must. Propane burns hotter than butane and is therefore the preferred gas for use with pizza ovens. The majority are propane-only, but some work with butane too. Wood-fired pizza ovens To make the dough, combine the dry ingredients and honey in the bowl of a stand mixer fitted with a dough hook. Start the machine on a low speed and pour in the lager. Knead on a low speed for 3 minutes, then increase the speed to the next setting and knead for a further 6 minutes. If you’re making the dough by hand, combine the ingredients in a large mixing bowl to form a rough dough. Tip out onto a work surface and knead for 10 minutes. Keep a consistent temperature 400°C is usually ideal for cooking pizza, but it can vary depending on what type of pizza you're cooking. A consistent heat will cook your pizzas evenly and keep them from burning unexpectedly.

Coriander (cilantro) - This adds a little freshness to the pizza, and some colour. You can leave it off, or swap it for fresh chives. When getting the flames going, heating the oven to temperature and cooking pizzas, we note any design elements or features that impact our cooking experience. Time to reach cooking temperatureRotate it regularly The strongest heat usually comes from one direction, especially in gas and wood-fired ovens. You'll want to rotate the pizza a few times during cooking to make sure it cooks evenly. Once every 30 seconds is a good rule of thumb, but keep an eye on it while it cooks. These are made to sit on top of a gas or charcoal barbecue, and are usually made up of a simple metal box with a pizza stone inside. They heat up from below using the barbecue grill. Ease of build and use: We timed how long it took to build the oven and rated the instruction manual. We then assessed how easy it was to use the oven.
